Rubbed sage is a light, fluffy powder produced from the dried leaves of the sage plant. Common in Mediterranean and Italian cuisine, but blends well in nearly all world cuisines.
Newman’s Own™ Rubbed Sage has a woody, piney aroma with a pepper-like earthy, warm and spicy, almost balsamic flavor.
Use it on pork, lamb, poultry, fish, sausages, tofu, beans, pickles, potatoes, in meatballs, cheese dishes, chowders, soups, stews, salad dressings, tomato sauce, stuffing and also in teas.
Pairs well with bay leaf, garlic, marjoram, onion, oregano, parsley, rosemary and thyme. Use twice as much rubbed sage when substituting it in a recipe that calls for ground sage. 1 ounce (2 tablespoons) of rubbed sage can replace 1 cup of fresh sage.
