White Chocolate Blondie Cups

We’re absolutely smitten with these white chocolate blondie cups crafted using our creamy Vanilla Newman-O’s from @tastingthyme1. This recipe is bound to be a hit after everyone’s finished their dinner.

Ingredients

  • Vanilla Newman-O’s
  • 125g melted white chocolate
  • 170g melted unsalted butter
  • 125g granulated sugar
  • 75g light brown sugar
  • 2 large eggs
  • 4 tsp vanilla
  • 115g AP flour
  • 70g unsalted butter
  • 300g powdered sugar
  • 2 tablespoons milk

Directions

Preheat oven to 390F/180C. Line a 12 hole muffin tin.

In a large bowl, combine 125g melted white chocolate, 170g melted unsalted butter, 125g granulated sugar and 75g light brown sugar. Mix to combine.

Add 2 large eggs and 2 tsp vanilla and mix again. Finally fold in 115g AP flour.

Scoop a tablespoon of batter into each muffin cup. Add one Vanilla Newman-O and press down. Top with more of the batter until the cups are about 2/3rds full. Bake 20-25 minutes – until golden!

While still warm, make an indent into each cup (as shown) using a teaspoon/end of a wooden spoon. Let cool.

Once cool, combine the filling of approx. 15 Vanilla Newman-O’s, 2 teaspoons of vanilla extract and 70g unsalted butter in an electric mixer. Gradually add in 300g powdered sugar and 2 tablespoons of milk until smooth and luscious.

Pipe swirls into the blondie cups, top with mini white chocolate chips and serve!
