  • 6 Tbsp margarine or butter, softened
  • ½ cup packed light brown sugar
  • 1/3 cup granulated sugar
  • 2 large egg whites
  • 1 tsp vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1 tsp baking soda
  • 2 cups popped Newman’s Own Microwave Popcorn of your choice, chopped in food processor
  • 1 cup semisweet chocolate chips
  • 1 jar macadamia nuts, chopped (optional)
  • ½ cup quick-cooking oats, uncooked
  • ½ cup toffee bits



Preheat oven to 375°F. In a large bowl, with mixer at high speed, beat margarine or butter and sugars until light and creamy. Add egg whites and vanilla; beat until smooth. Add flour and baking soda; beat on low speed just until blended.


Stir in popcorn, chocolate chips, macadamia nuts, oats and toffee bits. Drop by rounded tablespoon onto ungreased cookie sheet. Bake 12-15 minutes until lightly browned.


Transfer to wire rack to cool.
