Refreshing and bursting with flavor, this zesty shrimp ceviche is prepared with fresh pineapple and Newman’s Own Pineapple Salsa for a sweet and tangy balance.
Pineapple Shrimp Ceviche
Serves: 4 to 6

Cook Time: 20 minutes (+ 55 minutes standing time)
Ingredients
- 1 lb peeled, deveined, tails-removed high-quality shrimp, finely diced (41–50 count)
- 1 1/4 cups lime juice, divided
- 1 tsp salt
- 1/2 cup diced cucumber
- 1/2 cup diced red onion
- 1/2 cup diced pineapple
- 1/2 cup diced red bell pepper
- 1/2 cup Newman’s Own® Pineapple Salsa
- 1/4 cup finely chopped fresh cilantro, divided
- 1 avocado, halved, pitted, peeled and diced
- 4.25 oz (half a 9.5 oz bag) tortilla chips
Directions
In nonreactive medium bowl, toss together shrimp, 1 cup lime juice and salt. Cover and refrigerate for 45 to 50 minutes or until shrimp are opaque and slightly firm.
In large bowl, stir together cucumber, red onion, pineapple, red pepper, Pineapple Salsa, remaining lime juice and 2 tbsp cilantro.
Toss marinated shrimp with pineapple mixture. Cover and chill for 10 to 15 minutes or until flavors are married. Fold in avocado just before serving. Garnish with remaining cilantro.
Serve ceviche with tortilla chips.
