Halloween Cookies and Cream Crispy Rice Bars

Flavored with cookies and cream flavors, these adorable Halloween treat bars taste as good as they look.

Ingredients

3 tbsp butter

3 cups mini marshmallows

1/2 cup white chocolate chips

1 tsp vanilla extract

8 Newman’s Own® Original Newman-O’s, chopped

4 cups rice cereal

2 oz blue candy melts, melted

2 oz neon green candy melts, melted

2 oz orange candy melts, melted

2 oz purple candy melts, melted

Various sizes of candy eyes, for decorating

Line 8-inch square baking pan with parchment paper, with paper overhanging sides.

In large saucepan set over low heat, melt butter. Add marshmallows. Stir for 2 to 3 minutes or until completely melted. Stir in white chocolate chips until melted. Stir in vanilla and remove from heat.

Immediately add chopped cookies and rice cereal to marshmallow mixture and stir until well coated. Using wet hands or buttered spatula, spread mixture evenly into prepared pan. Let cool completely.

Remove cereal treats from pan and remove parchment paper. Cut into 12 bars.

Dip half of each bar into one of the colors of melted candy melts, dipping 3 bars into each color. Arrange on parchment paper–lined baking sheet. Decorate with candy eyes. Let stand until chocolate sets.

 

Tips: To melt candy melts, place in microwave-safe bowl. Microwave on MEDIUM power for 45 seconds, stirring every 15 seconds, until smooth and melted.

Alternatively, use only one or two colors of candy melts.

Store leftover bars in airtight container for up to 3 days at room temperature.
