
Grilled Veggie Salad with Burrata and Crispy Baguette Crostini
Ingredients
Ingredients:
1 small eggplant
2 zucchini
1 summer squash
1 red onion
1 orange bell pepper
1 red bell pepper
1/2 lbs cherry/grape tomatoes
1/4 cup Newman’s Own Zesty Italian Dressing
3 tbs olive oil
1 tsp salt
1/2 tsp black pepper
Baguette crostini
1/3 of a baguette
1/2 tsp salt
1/2 tsp black pepper
For serving:
8 oz Burrata, for serving
Lettuce leaves
Basil leaves
Directions
Slice your bread and season with olive oil, salt and pepper
Wash and slice all your veggies and toss them in the Newman’s Own Zesty Italian, olive oil, salt and pepper
Preheat grill to about 425 F and grill the veggies and bread in batches
Once grilled- place on a platter with lettuce leaves, top with creamy Burrata, basil, a drizzle of the zesty dressing and enjoy!
