Hawaiian Chicken Caesar Salad with Macadamia Nuts

Ingredients

  • 1/3 cup Newman’s Own Avocado Oil & Extra Virgin Olive Oil Caesar Dressing
  • 1 lb boneless skinless chicken breasts
  • 4 pineapple rings
  • 4 red onion rounds (1/4-inch thick slices)
  • 2 tbsp olive oil
  • 1/2 tsp Newman’s Own Coarse Ground Black Pepper
  • 1/2 tsp Newman’s Own Sea Salt Flakes
  • 4 romaine lettuce hearts, halved lengthwise
  • 1/4 cup toasted macadamia nuts

Directions

Preheat grill to medium-high heat; grease grate well. Toss together chicken, pineapple rings, red onion rounds, olive oil, salt and pepper. Grill chicken for 5 to 7 minutes per side or until well marked and cooked through. Grill pineapple rings and red onion rounds for 2 to 3 minutes per side or until grill marked and tender. Cut chicken into cubes. Dice pineapple rings and red onion rounds.

Arrange romaine lettuce spears on serving platter. Top with chicken, pineapple and red onion. Drizzle with Newman’s Own Avocado Oil & Extra Virgin Olive Oil Dairy Free Caesar Dressing. Sprinkle with macadamia nuts.

Tips:
– Substitute almonds or pecans for macadamia nuts.

– To make pineapple rings, remove the center core with a cookie cutter.
