Mushroom Burrata Toast

Ingredients

3 tbsp butter, divided

1 lb sliced brown mushrooms

2 tbsp finely chopped fresh thyme

1/2 tsp salt

1/2 tsp black pepper

1/2 cup Newman’s Own® Lemon Basil Vinaigrette, divided

3 tbsp spicy liquid honey, divided

3 ciabatta buns, split

8 oz burrata cheese, torn into pieces

1/4 cup fresh basil leaves, torn

1 tbsp freshly grated lemon zest

In large skillet set over medium-high heat, melt 2 tbsp butter. Add mushrooms, thyme, salt and pepper; cook, stirring occasionally, for 8 to 10 minutes or until mushrooms are golden brown and tender.

Stir in 1/4 cup vinaigrette and bring to a simmer; remove from heat. Dot mushrooms with remaining butter and add 2 tbsp spicy honey. Swirl pan to melt butter and combine with honey.

Meanwhile, preheat broiler.

Arrange ciabatta buns open-face on baking sheet. Broil, turning once, for 2 to 4 minutes or until golden brown and toasted. Brush cut sides of buns with remaining vinaigrette.

Divide cheese among toasts. Top with mushrooms mixture. Drizzle with remaining spicy honey. Garnish with basil and lemon zest.
